So for years, I have just made simple meals. I eat a lot of chicken and a steak on occasion. I typically eat at home, not only because it is cheaper, but that way I know what is in my food and I don’t have to worry about any gluten being in a dish that I would order from a restaurant that doesn’t designate any gluten free options. I’m currently on a program that integrates strength training and counting macros. Which if you have never heard of macros, they are the fats, carbs and proteins that make up the foods you eat. As a result of eating a certain amount of fat, carbs and proteins, I log all my food everyday on the my fitness pal app and I make a lot of meals up ahead of time and freeze them. I will grill up about 8 chicken breasts at a time and individually portion my meals with some fresh or frozen vegetables. I put them in the fridge and freezer and pull them out when I’m ready to eat. I love simple eating. I also like making more of a dish that has more flavors and interest, but I only find I need to do that on occasion, not all the time.
Here is a rundown of my normal day, it might seem boring to eat the same thing all the time, but it is easy and I don’t really need to have much variety or need to change things up very often.
- Breakfast – smoothie, typically greens, blueberries or mixed berries and protein powder
- Snacks – Yogurt (I do dairy free, so almond yogurt) and blueberries & granola (homemade, of course!)
- Lunch – Chicken & vegetables
- Dinner – Chicken & vegetables
